Light...

I am finally seeing light at the end of my canning tunnel. As I type I have 7 quarts of soup that are processing in the pressure canner. This will bring my total canning to over 400 jars this year. That is just about half of what I canned last year. I didn't need to can as much this year because I still have lots of food left from a year ago. It was really nice to have a more laid back canning season. I would have like to have been able to put away more fruit but most of the crops in our area were destroyed. Thankfully I put up so much last season that we won't be hurt as much by the high prices out there this year.
