What to keep?

We are trying very hard to get rid of absolutely everything that we don't need. There are some things though that it is hard to know what to do with. For example we bought some inflatable boats for our kids to use when we go camping. These aren't things we use all the time and they aren't things we absolutely have to have to go camping. Replacing them costs money but so does storing a bunch of stuff that you only use every so often. What do you do when it comes to stuff like this? For small compact items I tend to keep them but larger and more inexpensive thing I tend to want to give them away.
